What you are going to need (18 cupcakes).
- 2 cups of flour
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/2 cup (1 stick) of unsalted butter, softened
- 1 cup of dark brown sugar, packed
- 3 large eggs
- 2 teaspoons of vanilla extract
- 1 teaspoon of butter flavouring
- 1/2 cup of buttermilk
- 1/2 cup of cream soda
Now, let’s the magic begins!
To begin preheat the oven to 350 degrees F (175ºC) and line a cupcake tin with cups.
Then mix the flour, baking soda, baking powder and salt and set it aside. In other bowl beat the butter and brown sugar. Then add to it the eggs (one at a time), and the vanilla extract with butter flavouring.
Now you are going to fold 1/3 of the flour mixture, the buttermilk, again 1/3 of the flour mixture, cream soda, and the rest of flour mixture. Now you just need to fill the cupcake liners (only 3/4 OK?) and bake for 15-20 minutes.

In a saucepan on medium heat, you are going to melt 11 ounces butterscotch chips into 1 cup of heavy cream. Let it cool.
Beat 6 tablespoons of unsalted butter until light and fluffy and mix with 1/4 cup of butterscotch ganache, 1 teaspoon of vanilla, 1 teaspoon of butter flavouring, and a pinch of salt. Beat in 3-3 1/2 cups of powered sugar for 2-3 minutes. Add heavy cream until you get the desired consistency.
Now you just need to pour the butterscotch ganache into a plastic squeeze bottle and fill the cupcakes. Then fill a pastry bag with butterscotch buttercream and pipe on top of cupcakes.
